baani began as an exploration of India's diverse culinary landscape. We wanted to strip away the expected and present authentic, unapologetic flavors in an environment that reflects Mumbai's modern, pulsating energy.

We traded ornate decor for stark, brutalist architecture, allowing the vibrant colors and complex aromas of our food to take center stage. It is a dining experience built entirely on contrast.

With over two decades mastering the tandoor, Chef Vikram brings precision and passion to every plate. His approach relies on sourcing the finest regional ingredients and letting their natural intensity speak for itself. For him, plating is an architectural endeavor—every element serves a distinct purpose.
